Making Fudgy Oreo Brownies on our Great Oreo Cookie Quest

As you may have seen, I’ve just begun to home educate H. This means that we can learn what we want, when we want and how we want. And this means that we have an excuse to do even more cooking and baking – hurray! (Not sure my ever-expanding waistline agrees though…) H has fairly recently discovered Oreos, so, as part of the Oreo Cookie Quest, in association with Britmums, we decided to see if we could make something interesting with them for our own Great Oreo Cookie Quest!



Fudgy Oreo Brownies



To make these deliciously rich and squidgy brownies you will need:


  • 140g unsalted butter
  • 300g granulated sugar
  • 75g cocoa powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 60g plain flour
  • 16 whole Oreos
  • 8 Oreos smashed into pieces
  • 90g cup chocolate chips – optional (it’s pretty chocolatey anyway!)


To make the brownies

  1. Preheat the oven to 180C/350F/Gas 4. Line an 8×8-inch square brownie tin with foil or parchment paper.

  2. Put the butter, sugar, cocoa powder, and salt into a microwave-safe bowl, and microwave in 30 second bursts, stirring after each one, until the butter is melted and the mixture feels very warm to the touch.

  3. Mix in the eggs and vanilla extract until combined. Fold in the flour until fully mixed in. If using them, fold in the chocolate chips.

4. Pour half of the batter into the lined tin, and spread out evenly. Place the whole Oreos evenly over the batter, and top with the remaining batter. Top with the smashed Oreos.


5. Lick the bowl.


6. Bake for 30 – 35 minutes, or until a skewer or knife inserted into the centre comes out almost clean – you still want a little gooiness. Leave to cool completely in the pan on a wire rack before cutting into 16 squares.


Apparently, the brownies will keep for a good few days in an airtight container, but ours didn’t last long enough to find out! Also, you can freeze them, but why on earth you’d want to do that…


I wasn’t overly keen on Oreos before making these brownies, but I have to say, they are absolutely delicious! Very sweet though, so you could definitely leave out the chocolate chips. The chunks of Oreos give the squidgy brownies a lovely variety of textures with each bite, and they’re pretty rich, so one is plenty! (Yes, even for me!)
